Muse Brasserie although predominantly classic French, reflects the inspiration and influence chef Franck has had on his culinary journey. The menu offers an array of dishes from all over Europe and flavours from both India and the Far East also play a significant part in creating some new and exciting palates.

A native of Cachan, Paris, Franck Grillet found his cookery calling at an early age. He enrolled in the renowned CEPROC in Paris aged 16 and embraced his new career with a passion. Upon graduating first in his class, he worked in a range of Michelin star French restaurants in Paris.
Franck soon moved to the Dordogne which is renowned for its outstanding natural beauty and culinary masterpieces including, truffles, foie-gras and duck. He secured a position as Second Chef at the 2 Michelin star establishment, L’Hotel du Parc. From there, Franck moved to Bordeaux and worked at other Michelin Star restaurants, including, Rouzic and La Tupina.
Franck has always been an advocate of the Bistronomy revolution which began in the 90’s. He firmly believes that food should be cooked with order, discipline and technique but simultaneously prices should be affordable so as not to be elitist or exclusive. His longstanding friendship with fellow Chef Pramod has inspired him to develop new and innovative culinary creations.
